Erikson stepped in last February when the owners of Pizza Mogul pulled out just before the Resort opened for the season. In one month, Erikson had revamped the interior to provide sushi and opened for the remainder of the season.
This is not the first time Erikson has operated a Sushi Restaurant. He was a part owner in Yamato Japanese Restaurant in downtown Courtenay, but sold his half a couple of years ago. He currently operates another Sushi-Mon restaurant in Qualicum Beach.
Sushi-Mon at Mount Washington will open this season with a liquor license and some improvements to its outside deck, as well as a bit of a facelift inside. However, the eatery’s signature noodle bowls will be back, Erikson said.
Sushi-Mon’s four-plus employees will also supply sushi to both the Alpine Lodge and Raven Lodge – between 150 and 300 rolls daily. The restaurant will be open from 11 a.m. to 4 p.m. and maybe after hours.
